Just took the plunge and got the itouch (I know!) from Amazon. It's got the John Lennon pic but the 1.1.2 firmware and no new apps so you are not guaranteed the update just becouse of the pic.
I went to upgrade to 1.1.3 and bricked my touch- less than a day! was I pissed. I was able to get it reactivated and updated by using a different computer with a fresh itunes install but I was sweating it. the updated apps are what I was waiting for and totally worth it. It fixed a number of networking issues I was havving right away. Also I could not get onto my network which uses a d-link router. Log says it was releasing the iIP as soon as it got it. fixed that by giving it a static IP for my network. Now all is love!

Haha, guess what?
I went to buy an iPod touch (the ipod touch without the new software upgrade) yesterday from the local Circuit City for 278$ (they were on sale). In the store, all the Touches was posted for 299$, but I told them they were on sale on circuitcity.com, and they agreed to give me the sale price on it. But later at home, I turn on my iTouch, and its the new one, with the latest software upgrade, John Lennon's box art, and the new apps! (The software upgrade costs 20$, from apple.com).
I guess they didn't know that the OLD (Macy Gray) ipod touches were supposed to be sold at the sale price, and let me have the new one. (I didnt realize that the John Lennon box art were those of the new iPods either.)
Today, I check Circuit City's website and they have realized the loophole, and thus -
"All Ipods on Sale - *Excludes iPod touch MA623LLB/MA627LLB [The John Lennon ones]"

Moral of the story: Go to a store, ask for the old version of a gadget thats on sale, and hopefully get the new version instead (for the old version's sale price!)

I love ignorant salespersons.
